This Garlicky Cabbage Soup is a comforting and flavorful dish that’s perfect for a chilly day. The combination of tender cabbage, aromatic garlic, and a rich broth makes for a truly satisfying meal.
Ingredients
– 2 tablespoons olive oil
– 1 large onion, diced
– 6 cloves garlic, minced
– 1 head of cabbage, chopped
– 4 cups low-sodium vegetable or chicken broth
– 2 bay leaves
– 1 teaspoon dried thyme
– 1/2 teaspoon crushed red pepper flakes (optional)
– Salt and black pepper to taste
– Fresh parsley, chopped (for garnish)
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the diced onion and sauté for 5-7 minutes, until translucent.
3. Stir in the minced garlic and cook for an additional 2 minutes, until fragrant.
4. Add the chopped cabbage to the pot and stir to combine. Cook for 5-7 minutes, until the cabbage starts to wilt.
5. Pour in the vegetable or chicken broth and add the bay leaves, dried thyme, and crushed red pepper flakes (if using). Season with salt and black pepper to taste.
6. Bring the soup to a boil, then reduce the heat and let it simmer for 20-25 minutes, or until the cabbage is tender.
7. Remove the bay leaves and serve the Garlicky Cabbage Soup hot, garnished with fresh chopped parsley.
Notes
For a creamier texture, you can blend a portion of the soup using an immersion blender or transfer some of the soup to a blender and then return it to the pot. You can also add cooked sausage or bacon for extra flavor and protein.
