Ingredients

– 4 cups chicken or vegetable broth

– 2 cloves garlic, minced

– 1 onion, diced

– 2 carrots, peeled and sliced

– 2 celery stalks, sliced

– 1 cup chopped kale or spinach

– 2 tablespoons fresh parsley, chopped

– 1 teaspoon ground ginger

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper


Instructions

1. In a large pot, heat a drizzle of olive oil over medium heat. Add the garlic, onion, carrots, and celery. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are softened.

2. Pour in the broth and add the kale or spinach, parsley, ginger, salt, and pepper. Bring the soup to a simmer and cook for 10-15 minutes, or until the vegetables are tender.
