Ingredients
– 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
– 2 tablespoons olive oil
– 1 large onion, diced
– 3 cloves garlic, minced
– 2 tablespoons freshly grated ginger
– 4 cups low-sodium chicken broth
– 2 cups water
– 2 medium carrots, peeled and sliced
– 8 ounces egg noodles
– 2 tablespoons chopped fresh parsley
– 1 teaspoon dried thyme
– Salt and black pepper to taste
Instructions
1. In a large pot or Dutch oven, heat the olive oil over medium heat.
2. Add the diced onion and sauté for 3-4 minutes until translucent.
3. Add the minced garlic and grated ginger. Cook for 1 minute, stirring constantly, until fragrant.
4. Add the chicken pieces and cook for 2-3 minutes, until lightly browned.
5. Pour in the chicken broth and water. Bring the mixture to a boil.
6. Add the sliced carrots and egg noodles. Reduce heat and simmer for 12-15 minutes, until the noodles are tender.
7. Stir in the chopped parsley and dried thyme. Season with salt and black pepper to taste.
