Description

Tender, juicy ginger lime pork tenderloin served over a bed of fragrant, creamy coconut rice – a quick and easy weeknight meal bursting with bold, aromatic flavors.


Ingredients

– 1 lb pork tenderloin, trimmed

– 2 tbsp freshly grated ginger

– 2 limes, zested and juiced

– 2 tbsp olive oil

– 1 tsp salt

– 1/2 tsp black pepper

– 1 cup uncooked jasmine rice

– 1 (13.5 oz) can coconut milk

– 1 cup water

– 1/4 tsp salt


Instructions

1. In a shallow dish, combine the pork, ginger, lime zest, 2 tbsp lime juice, 1 tbsp olive oil, 1 tsp salt, and 1/2 tsp pepper. Cover and marinate for 30 minutes to 1 hour.

2. In a medium saucepan, combine the rice, coconut milk, water, and 1/4 tsp salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, until rice is tender.

3. In a large skillet, heat the remaining 1 tbsp olive oil over medium-high heat. Remove the pork from the marinade and sear on all sides until a nice crust forms, about 2-3 minutes per side.

4. Reduce heat to medium-low and continue cooking the pork until it reaches an internal temperature of 145°F, about 5-7 minutes more.

5. Remove pork from heat and let rest for 5 minutes before slicing.

6. Serve the ginger lime pork over the creamy coconut rice, drizzling with any remaining pork juices. Garnish with additional lime wedges, if desired.

Notes

– For extra flavor, you can also marinate the pork overnight.

– Swap out the jasmine rice for cauliflower rice for a low-carb option.

– Garnish with chopped cilantro, green onions, or toasted coconut flakes.
