Description

Ingredients

– 2 1/4 cups all-purpose flour

– 2 teaspoons ground ginger

– 1 teaspoon baking soda

– 1/2 teaspoon ground cinnamon

– 1/4 teaspoon ground nutmeg

– 1/4 teaspoon salt

– 3/4 cup unsalted butter, softened

– 3/4 cup packed brown sugar

– 1 large egg

– 1/4 cup molasses


Instructions

1. – In a medium bowl, whisk together the flour, ginger, baking soda, cinnamon, nutmeg, and salt.

2. – In a large bowl, beat the butter and brown sugar until light and fluffy, about 2-3 minutes.

3. – Beat in the egg and molasses until well combined.

4. – Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

5. – Cover the dough and refrigerate for at least 30 minutes (or up to 3 days).

6. – Preheat the oven to 350°F (177°C). Line baking sheets with parchment paper.

7. – Scoop the dough by the tablespoonful and roll into balls. Place them about 2 inches apart on the prepared baking sheets.

8. – Bake for 8-10 minutes, or until the edges are set and the centers are still slightly soft.

9. – Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a chewier cookie, bake for 8 minutes. For a crispier cookie, bake for 10 minutes. Store the cookies in an airtight container at room temperature for up to 1 week.
