Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 2 tablespoons olive oil

– 1 medium onion, diced

– 3 carrots, peeled and sliced

– 3 stalks celery, sliced

– 3 cloves garlic, minced

– 6 cups gluten-free chicken broth

– 2 cups gluten-free egg noodles

– 2 tablespoons chopped fresh parsley

Instructions

1. – In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5-7 minutes until softened.

2. – Add the garlic and sauté for an additional minute.

3. – Pour in the chicken broth and bring the mixture to a boil.

4. – Add the cubed chicken and gluten-free noodles. Reduce heat and simmer for 15-20 minutes, or until the chicken is cooked through and the noodles are tender.

5. – Stir in the chopped parsley and season with salt and pepper to taste.

6. – Serve hot and enjoy!

Notes

For a thicker soup, you can add a tablespoon of cornstarch or arrowroot powder to the broth. You can also use any gluten-free pasta or rice in place of the egg noodles.
