Ingredients
– 1 cup uncooked jasmine rice
– 1 cup coconut milk
– 1/2 cup white sugar
– 1/4 teaspoon salt
– 2 ripe mangoes, peeled and sliced
Instructions
1. – Soak the jasmine rice in water for 30 minutes, then drain.
2. – In a saucepan, combine the soaked rice, coconut milk, sugar, and salt. Bring to a boil, then reduce heat and simmer for 15-20 minutes, stirring occasionally, until the rice is tender and the liquid is absorbed.
3. – Remove the rice from heat and let it sit for 5 minutes, covered.
4. – Serve the Mango Sticky Rice warm, topped with sliced fresh mangoes.
Notes
For best results, use ripe, juicy mangoes. You can also add a drizzle of coconut cream or a sprinkle of toasted coconut flakes for extra flavor and texture.
