Description

Tender, juicy chicken breasts stuffed with creamy goat cheese and topped with sweet, caramelized onions – a delicious 30-minute meal.


Ingredients

– 4 boneless, skinless chicken breasts

– 4 ounces goat cheese, softened

– 1 tablespoon olive oil

– 2 large onions, thinly sliced

– 3 cloves garlic, minced

– 2 tablespoons balsamic vinegar

– 1 tablespoon brown sugar

– Salt and pepper to taste

– Fresh thyme for garnish


Instructions

1. Preheat oven to 400°F.

2. Slice each chicken breast horizontally to create a pocket. Stuff each pocket with 1 ounce of the goat cheese.

3. Heat the olive oil in a large skillet over medium heat. Add the sliced onions and sauté for 10-15 minutes, stirring frequently, until caramelized.

4. Add the minced garlic, balsamic vinegar, and brown sugar. Cook for an additional 5 minutes, until the onions are very soft and sweet.

5. Place the stuffed chicken breasts in a baking dish. Top each with a portion of the caramelized onions.

6. Bake for 25-30 minutes, until the chicken is cooked through and the internal temperature reaches 165°F.

7. Garnish with fresh thyme before serving.

Notes

For a creamier texture, you can also mix the goat cheese with a bit of cream cheese or ricotta before stuffing. Serve with roasted potatoes or a fresh salad for a complete meal.
