Ingredients
– 2 cups all-purpose flour
– 1 teaspoon active dry yeast
– 1 teaspoon salt
– 1 tablespoon granulated sugar
– 3/4 cup warm water
– 3 tablespoons olive oil, plus more for drizzling
– 2 garlic cloves, minced
– 2 tablespoons fresh rosemary, chopped
Instructions
1. Preheat your oven to 400°F (200°C) and grease a 12-cup muffin tin.
2. In a large mixing bowl, combine the flour, yeast, salt, and sugar. Stir to mix well.
3. Add the warm water and 3 tablespoons of olive oil to the dry ingredients. Using a wooden spoon or your hands, mix until a sticky dough forms.
4. Turn the dough out onto a lightly floured surface and knead for 5 minutes, until the dough becomes smooth and elastic.
5. Divide the dough into 12 equal pieces and place each piece into a muffin cup. Gently press down to fill the cups.
6. Drizzle the tops of the muffins with a little more olive oil and sprinkle with the minced garlic and chopped rosemary.
7. Bake for 15-18 minutes, or until the muffins are golden brown and cooked through.
8. Serve the golden crust garlic rosemary focaccia muffins warm, with extra olive oil for dipping if desired.
Notes
For a more pronounced garlic flavor, you can increase the amount of minced garlic. You can also experiment with different herb combinations, such as thyme or oregano, to suit your taste preferences.
