Description

Ingredients

– 2 cups all-purpose flour

– 1 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 1 tablespoon grated grapefruit zest

– 1 tablespoon fresh thyme leaves

– 1/4 teaspoon salt


Instructions

1. Preheat the oven to 350°F (180°C). Line a baking sheet with parchment paper.

2. In a medium bowl, whisk together the flour, salt, and thyme leaves.

3. In a large bowl, beat the softened butter and sugar until light and fluffy, about 2-3 minutes.

4. Add the grated grapefruit zest and mix until well combined.

5. Gradually add the dry ingredients to the butter mixture, mixing until a dough forms.

6. Shape the dough into a disc, wrap in plastic wrap, and chill for at least 30 minutes.

7. Roll the chilled dough out to 1/4-inch thickness on a lightly floured surface.

8. Use a 2-inch round cookie cutter to cut out the shortbread cookies and place them on the prepared baking sheet.

9. Bake for 12-15 minutes, or until the cookies are lightly golden on the edges.

10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a more pronounced grapefruit flavor, you can add 1-2 tablespoons of grapefruit juice to the dough. The cookies can be stored in an airtight container for up to 1 week.
