Description

Enjoy the bold, Mediterranean flavors of these quick and easy Greek Ground Chicken Bowls. Packed with tender ground chicken, fresh vegetables, crumbled feta, and zesty seasonings, this one-bowl wonder makes for a satisfying and nutritious weeknight dinner.

Ingredients

– 1 lb ground chicken

– 1 cucumber, diced

– 2 tomatoes, diced

– 1/2 red onion, thinly sliced

– 1/2 cup crumbled feta cheese

– 2 cloves garlic, minced

– 1 tbsp dried oregano

– 1 tbsp lemon juice

– 2 tbsp olive oil

– Salt and pepper to taste

Instructions

1. – In a large skillet, cook the ground chicken over medium-high heat, breaking it up with a wooden spoon, until no longer pink, about 5-7 minutes.

2. – Drain any excess fat from the skillet.

3. – Add the diced cucumber, tomatoes, and sliced red onion to the skillet with the cooked chicken.

4. – Stir in the minced garlic, dried oregano, lemon juice, and a drizzle of olive oil. Season with salt and pepper to taste.

5. – Divide the Greek Ground Chicken mixture into bowls and top with crumbled feta cheese.

6. – Serve immediately, garnished with additional lemon wedges if desired.

Notes

– For a creamier texture, you can stir in a dollop of Greek yogurt or tzatziki sauce.

– Customize the toppings by adding kalamata olives, diced bell peppers, or fresh parsley.

– Store any leftover chicken mixture in an airtight container in the refrigerator for up to 3 days.
