Description

Indulge in the heavenly taste of this traditional Greek Honey Cake, a delightful dessert that will transport you to the sun-drenched Aegean coast. With its moist, honey-infused crumb and glistening glaze, this effortless recipe is a true delight for the senses.

Ingredients

– 1 cup all-purpose flour

– 1 teaspoon baking powder

– 1/4 teaspoon salt

– 3 large eggs

– 3/4 cup granulated sugar

– 1/2 cup honey, plus more for drizzling

– 1/2 cup vegetable oil

– 1 teaspoon vanilla extract

– Zest of 1 lemon

Instructions

1. Preheat your oven to 350°F (175°C). Grease an 8-inch square baking pan and line it with parchment paper, leaving some overhang for easy removal.

2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

3. In a large bowl, beat the eggs and sugar together until light and fluffy, about 2-3 minutes.

4. Add the honey, vegetable oil, vanilla extract, and lemon zest to the egg mixture, and whisk until well combined.

5. Gradually fold the dry ingredients into the wet ingredients until just combined, being careful not to overmix.

6. Pour the batter into the prepared baking pan and spread it evenly.

7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

8. Allow the cake to cool completely in the pan, then remove it using the parchment paper overhang.

9. Drizzle the top of the cake with additional honey, if desired. Slice and serve.

Notes

– For a more pronounced honey flavor, use a stronger-flavored honey. – Dust the top of the cake with powdered sugar for an extra touch of sweetness. – Store the cake in an airtight container at room temperature for up to 3 days.
