Description

Indulge in the classic flavors of Greece with this easy 30-minute Greek Meatball Bowl, featuring tender, flavorful meatballs, cool and creamy tzatziki sauce, fluffy white rice, and a variety of fresh vegetables.


Ingredients

– 1 lb ground lamb or beef

– 1/2 cup breadcrumbs

– 2 cloves garlic, minced

– 1/2 onion, finely chopped

– 1 tsp dried oregano

– 1 tsp salt

– 1/2 tsp black pepper

– 1 cup plain Greek yogurt

– 1 cucumber, peeled, seeded, and diced

– 2 tbsp lemon juice

– 1 garlic clove, minced

– 1/4 tsp salt

– 1 cup uncooked white rice

– 1 cup cherry tomatoes, halved

– 1/2 red onion, thinly sliced

– 1 cup diced cucumber


Instructions

1. – Preheat oven to 400°F. Line a baking sheet with parchment paper.

2. – In a large bowl, combine the ground meat, breadcrumbs, minced garlic, chopped onion, oregano, salt, and pepper. Mix until well combined.

3. – Roll the mixture into 1-inch meatballs and place them on the prepared baking sheet.

4. – Bake for 18-20 minutes, or until the meatballs are cooked through.

5. – While the meatballs are baking, make the tzatziki sauce. In a medium bowl, mix together the Greek yogurt, diced cucumber, lemon juice, minced garlic, and salt.

6. – Cook the rice according to package instructions.

7. – Assemble the Greek Meatball Bowls by placing the cooked rice in the bottom of a bowl. Top with the baked meatballs, tzatziki sauce, cherry tomatoes, red onion, and diced cucumber.

8. – Serve immediately and enjoy!

Notes

– For a healthier version, use ground turkey or chicken instead of lamb or beef.

– Adjust the amount of garlic and lemon juice in the tzatziki to your taste preferences.

– Leftover meatballs and tzatziki can be stored separately in the refrigerator for up to 3 days.
