Ingredients

– 1 block (14 oz) extra-firm tofu, cut into 1-inch cubes

– 1/4 cup olive oil

– 2 tablespoons lemon juice

– 2 cloves garlic, minced

– 1 tablespoon dried oregano

– 1 teaspoon ground cumin

– 1/2 teaspoon salt

– 1/4 teaspoon black pepper

– 1 red onion, cut into 1-inch pieces

– 1 red bell pepper, cut into 1-inch pieces

– 1 cup cherry tomatoes

– Lemon wedges, for serving

– Tzatziki sauce, for serving


Instructions

1. In a large bowl, combine the tofu cubes, olive oil, lemon juice, garlic, oregano, cumin, salt, and pepper. Toss gently to coat the tofu.

2. Cover the bowl and let the tofu marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
