Ingredients
2 cups all-purpose flour
2 cups granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking soda

1 cup buttermilk
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
1 tablespoon green food coloring
Cream Cheese Frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
1 (8 oz) package cream cheese, softened
1 teaspoon vanilla extract
Instructions
1. Preheat the oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.
3. In a separate bowl, whisk together the buttermilk, oil, eggs, and vanilla extract. Stir in the green food coloring until well combined.
4. Slowly pour the wet ingredients into the dry ingredients and stir just until combined, being careful not to overmix.
5. Divide the batter evenly among the prepared muffin cups, filling them about 3/4 full.
6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely on a wire rack.
7. For the frosting, beat the butter and cream cheese in a large bowl until light and fluffy. Gradually add the powdered sugar and vanilla extract, and continue beating until the frosting is smooth and creamy.
8. Frost the cooled cupcakes with the cream cheese frosting and serve.
Notes
Store leftover cupcakes in an airtight container in the refrigerator for up to 5 days. The unfrosted cupcakes can be frozen for up to 3 months.
