Ingredients
– 4 large eggs
– 1/2 cup almond flour
– 1/4 cup coconut flour
– 1 teaspoon baking powder
– 1 teaspoon vanilla extract
– 1/4 teaspoon salt
– 1 tablespoon granulated erythritol or other low-carb sweetener
Instructions
1. Preheat a waffle iron to medium-high heat.
2. In a large bowl, whisk the eggs until light and frothy.
3. Add the almond flour, coconut flour, baking powder, vanilla extract, salt, and sweetener. Whisk until the batter is smooth and well combined.
4. Grease the preheated waffle iron with non-stick cooking spray or melted butter.
5. Scoop the batter onto the waffle iron, using about 1/4 cup of batter per chaffle. Close the lid and cook for 3-4 minutes, or until the chaffles are golden brown and cooked through.
6. Remove the chaffles from the waffle iron and serve warm, dusted with powdered erythritol or topped with your favorite low-carb toppings.
