Description

Ingredients

– 2 cups all-purpose flour

– 2 cups granulated sugar

– 3/4 cup unsweetened cocoa powder

– 1 1/2 teaspoons baking soda

– 1/2 teaspoon salt

– 1 cup Guinness stout

– 1/2 cup vegetable oil

– 2 large eggs

– 1 teaspoon vanilla extract

– 1 cup (2 sticks) unsalted butter, softened

– 4 cups powdered sugar

– 1/4 cup Baileys Irish Cream


Instructions

1. Preheat oven to 350°F. Grease and flour a 9×13 inch baking pan.

2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda, and salt.

3. In a separate bowl, combine the Guinness, oil, eggs, and vanilla.

4. Gradually add the wet ingredients to the dry ingredients and mix until just combined.

5. Pour the batter into the prepared baking pan and bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.

6. Allow the cake to cool completely.

7. In a large bowl, beat the butter until light and fluffy. Gradually add the powdered sugar and Baileys, mixing until well combined and smooth.

8. Spread the Baileys frosting evenly over the top of the cooled cake.

9. Refrigerate the cake for at least 2 hours before serving.

Notes

This cake can be made a day in advance. Store any leftovers in the refrigerator.
