Ingredients

– 2 tablespoons butter

– 1 onion, diced

– 3 cloves garlic, minced

– 3 cups diced potatoes

– 2 cups diced ham

– 4 cups chicken or vegetable broth

– 1 cup heavy cream

– 1 teaspoon dried thyme

– Salt and pepper to taste


Instructions

1. – Melt the butter in a large pot over medium heat. Add the onion and garlic, and sauté for 2-3 minutes until fragrant.

2. – Add the diced potatoes and ham to the pot. Pour in the broth and stir to combine.

3. – Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.

4. – Stir in the heavy cream and dried thyme. Season with salt and pepper to taste.

5. – Serve the Ham And Potato Soup hot, garnished with fresh herbs, if desired.

Notes

– For a thicker soup, you can mash some of the potatoes against the side of the pot.
