Ingredients

– 1 lb ground beef

– 1 onion, diced

– 2 carrots, peeled and diced

– 2 celery stalks, diced

– 3 garlic cloves, minced

– 1 (28 oz) can diced tomatoes

– 4 cups beef broth

– 2 cups water

– 1 tsp dried thyme

– 1 tsp dried oregano

– 1 bay leaf

– Salt and pepper to taste


Instructions

1. – In a large pot or Dutch oven, cook the ground beef over medium-high heat until browned and crumbled, 5-7 minutes. Drain any excess fat.

2. – Add the onion, carrots, and celery to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.

3. – Stir in the garlic and cook for 1 minute, until fragrant.

4. – Add the diced tomatoes, beef broth, water, thyme, oregano, and bay leaf. Bring the mixture to a boil.

5. – Reduce the heat to low and let the soup simmer for 20-25 minutes, until the vegetables are tender.

6. – Season with salt and pepper to taste.

7. – Remove the bay leaf before serving.

– For a thicker soup, you can add a small amount of cornstarch or flour to the broth.
