Description

This Hangover Cure Garlic Potato Soup is a nourishing and comforting classic that’s perfect for those rough mornings. It’s creamy, flavorful, and easy to make in just 30 minutes.


Ingredients

– 2 pounds Yukon Gold potatoes, peeled and diced

– 6 cloves garlic, minced

– 1 large onion, diced

– 4 cups chicken or vegetable broth

– 1 cup heavy cream

– 2 tablespoons butter

– 1 teaspoon dried thyme

– Salt and pepper to taste

– Chopped parsley for garnish


Instructions

1. In a large pot, melt the butter over medium heat. Add the diced onion and minced garlic and sauté for 3-4 minutes until fragrant.

2. Add the diced potatoes and thyme, and pour in the broth. Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.

3. Using an immersion blender, purée the soup until smooth and creamy. Alternatively, transfer the soup to a blender and blend in batches.

4. Stir in the heavy cream and season with salt and pepper to taste.

5. Serve the Hangover Cure Garlic Potato Soup hot, garnished with fresh chopped parsley.

Notes

For a thicker soup, add an extra 1/2 cup of cream. For a vegetarian version, use vegetable broth instead of chicken.
