Ingredients
– 1 lb boneless, skinless chicken breasts, diced
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 3 garlic cloves, minced
– 8 cups low-sodium chicken broth
– 2 cups egg noodles
– 2 bay leaves
– 1 tsp dried thyme
– Salt and black pepper to taste
Instructions
1. 1. In a large pot or Dutch oven, sauté the onion, carrots, and celery in a bit of olive oil over medium heat until softened, about 5-7 minutes.
2. 2. Add the garlic and cook for 1 minute more until fragrant.
3. 3. Pour in the chicken broth and add the diced chicken, bay leaves, and thyme. Season with salt and pepper.
4. 4. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, until the chicken is cooked through.
5. 5. Add the egg noodles and cook for an additional 8-10 minutes, until the noodles are tender.

Notes
For a creamier soup, you can stir in a splash of heavy cream or milk at the end. You can also use any type of pasta or noodle you prefer. To make it gluten-free, use gluten-free noodles.
