Ingredients
– 1 lb boneless, skinless chicken breasts, diced
– 1 onion, diced
– 3 carrots, peeled and sliced
– 3 celery stalks, sliced
– 3 garlic cloves, minced
– 8 cups low-sodium chicken broth
– 2 cups egg noodles
– 2 bay leaves
– 1 tsp dried thyme
– Salt and black pepper to taste
Instructions
1. In a large pot or Dutch oven, sauté the onion, carrots, and celery in a bit of olive oil over medium heat until softened, about 5-7 minutes.
2. Add the garlic and cook for 1 minute more until fragrant.
3. Pour in the chicken broth and add the diced chicken, bay leaves, and thyme. Season with salt and pepper.
4. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, until the chicken is cooked through.
5. Add the egg noodles and cook for an additional 8-10 minutes, until the noodles are tender.
6. Remove the bay leaves before serving. Taste and adjust seasoning as needed.
Notes
For a creamier soup, you can stir in a splash of heavy cream or milk at the end. You can also use any type of pasta or noodle you prefer. To make it gluten-free, use gluten-free noodles.
