Description

Ingredients

– 1 lb ground beef or turkey

– 1 onion, diced

– 3 cloves garlic, minced

– 1 (28 oz) can diced tomatoes

– 2 cups beef or chicken broth

– 1 (6 oz) can tomato paste

– 8 oz lasagna noodles, broken into 1-inch pieces

– 1 tsp dried oregano

– 1 tsp dried basil

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1 cup shredded mozzarella cheese

– Chopped fresh basil for garnish


Instructions

1. – In a large pot or Dutch oven, cook the ground beef or turkey over medium heat until browned and crumbled, 5-7 minutes. Drain excess fat.

2. – Add the onion and garlic to the pot and sauté until softened, about 3-5 minutes.

3. – Stir in the diced tomatoes, broth, tomato paste, lasagna noodle pieces, oregano, basil, salt, and pepper. Bring to a boil.

4. – Reduce heat and simmer, stirring occasionally, until the noodles are tender, about 20-25 minutes.

5. – Remove from heat and stir in the mozzarella cheese until melted.

6. – Serve hot, garnished with chopped fresh basil.

Notes

– For a thicker soup, use less broth.

– Swap in different types of cheese, such as Parmesan or ricotta, for variety.

– Add extra vegetables like spinach, zucchini, or bell peppers for more nutrition.
