Description
This Healthy Taco Soup is a quick and easy weeknight dinner that’s packed with flavor and nutrition. Made with lean ground turkey, beans, and a blend of spices, it’s a comforting and satisfying meal the whole family will love.
Ingredients
– 1 lb lean ground turkey
– 1 onion, diced
– 2 bell peppers, diced
– 3 cloves garlic, minced
– 1 tbsp chili powder
– 1 tsp cumin
– 1 tsp oregano
– 1/2 tsp smoked paprika
– 1/4 tsp cayenne pepper (optional)
– 1 (15 oz) can black beans, drained and rinsed
– 1 (15 oz) can pinto beans, drained and rinsed
– 1 (15 oz) can diced tomatoes
– 4 cups low-sodium chicken broth
– Salt and pepper to taste
– Toppings: shredded cheese, sour cream, chopped cilantro
Instructions
1. 1. In a large pot or Dutch oven, cook the ground turkey over medium-high heat, breaking it up as it cooks, until no longer pink, about 5-7 minutes.
2. 2. Add the diced onion and bell peppers to the pot and cook for 3-4 minutes, until softened.
3. 3. Stir in the minced garlic, chili powder, cumin, oregano, smoked paprika, and cayenne (if using). Cook for 1 minute until fragrant.
4. 4. Add the black beans, pinto beans, diced tomatoes, and chicken broth. Bring the soup to a simmer and let it cook for 10-15 minutes, until the flavors have melded.
5. 5. Season with salt and pepper to taste.
6. 6. Serve the Healthy Taco Soup hot, topped with shredded cheese, a dollop of sour cream, and chopped cilantro.
Notes
– For a thicker soup, you can mash some of the beans with a potato masher or the back of a spoon.
– Customize the spice level by adjusting the amount of chili powder and cayenne.
– This soup freezes well for up to 3 months. Thaw in the refrigerator overnight before reheating.
