This healthy white chicken chili is a delicious and nutritious one-pot meal that’s perfect for cozy weeknights. Made with tender chicken, creamy white beans, and a blend of flavorful spices, it’s a comforting and satisfying dish that the whole family will enjoy.


Ingredients

– 1 lb boneless, skinless chicken breasts, cubed

– 2 cans (15 oz each) white beans, drained and rinsed

– 1 large onion, diced

– 3 cloves garlic, minced

– 2 tsp ground cumin

– 1 tsp dried oregano

– 1 tsp chili powder

– 1/2 tsp ground coriander

– 1/4 tsp cayenne pepper (or to taste)

– 4 cups low-sodium chicken broth

– 1 cup shredded Monterey Jack cheese (optional)

– Chopped fresh cilantro, for serving

– Lime wedges, for serving


Instructions

1. – In a large pot or Dutch oven, sauté the onion in a bit of olive oil over medium heat until translucent, about 5 minutes.

2. – Add the garlic and cook for 1 minute, until fragrant.

3. – Stir in the cubed chicken and cook until lightly browned, about 5 minutes.

4. – Add the white beans, cumin, oregano, chili powder, coriander, and cayenne. Stir to combine.

5. – Pour in the chicken broth and bring the mixture to a boil. Reduce heat and simmer for 20-25 minutes, until the chicken is cooked through and the flavors have melded.

6. – Ladle the chili into bowls and top with shredded Monterey Jack cheese (if using), chopped cilantro, and a squeeze of fresh lime juice.

Notes

– For a creamier texture, you can blend or mash some of the white beans before adding them to the chili.

– Adjust the spice level by adding more or less cayenne pepper to suit your taste.

– Serve with cornbread, tortilla chips, or a fresh green salad for a complete meal.
