Ingredients
– 1 cup low-fat cottage cheese
– 1/4 cup creamy peanut butter
– 2 tablespoons honey
– 1 teaspoon vanilla extract
– Pinch of salt
Instructions
1. In a food processor or high-powered blender, combine the cottage cheese, peanut butter, honey, vanilla, and salt.
2. Blend until smooth and creamy, scraping down the sides as needed.
3. Transfer the mousse to a serving bowl or individual ramekins.
4. Refrigerate for at least 30 minutes to allow the flavors to meld and the texture to set.
5. Serve chilled, with an optional drizzle of peanut butter or chopped peanuts on top.
Notes
For a thicker mousse, use 1/3 cup peanut butter instead of 1/4 cup. You can also experiment with different nut butters or a combination of peanut butter and another nut butter. Refrigerate leftovers in an airtight container for up to 3 days.
