Tender, juicy beef bites simmered in a rich, garlic-infused butter sauce make for a high-protein, flavor-packed meal that’s perfect for busy weeknights.
Ingredients
– 2 lbs beef chuck, cut into 1-inch cubes
– 1/2 cup unsalted butter
– 6 cloves garlic, minced
– 1 tsp salt
– 1/2 tsp black pepper
– 1/4 cup low-sodium beef broth
– 2 tbsp fresh parsley, chopped
Instructions
1. Season the beef cubes with salt and pepper.
2. In a large skillet, melt the butter over medium-high heat. Add the garlic and sauté for 1 minute until fragrant.
3. Add the beef cubes and sear on all sides until browned, about 3-5 minutes total.
4. Transfer the beef and garlic butter mixture to a slow cooker. Pour in the beef broth.
5. Cover and cook on low for 6-8 hours, or on high for 3-4 hours, until the beef is very tender.
6. Stir in the chopped parsley just before serving.
Notes
For best results, use a high-quality beef chuck roast and cut it into evenly sized cubes. The longer cooking time allows the flavors to really develop. Serve over mashed potatoes, rice, or with a side salad.
