Ingredients

– 2 tablespoons olive oil

– 1 medium onion, diced

– 3 cloves garlic, minced

– 2 cans (15 oz each) white beans, rinsed and drained

– 4 cups low-sodium chicken or vegetable broth

– 1 teaspoon dried thyme

– 1/2 teaspoon dried rosemary

– 1/4 teaspoon red pepper flakes (optional)

– Salt and black pepper to taste

– Chopped fresh parsley for garnish


Instructions

1. In a large pot, heat the olive oil over medium heat.

2. Add the diced onion and sauté for 5-7 minutes until translucent.

3. Add the minced garlic and sauté for an additional 1-2 minutes, until fragrant.

4. Add the rinsed and drained white beans, broth, dried thyme, dried rosemary, and red pepper flakes (if using). Stir to combine.

5. Bring the mixture to a simmer and let it cook for 15-20 minutes, or until the beans are tender and the flavors have melded.

6. Season with salt and black pepper to taste.

Notes

This soup can be made vegetarian by using vegetable broth instead of chicken broth. For a creamier texture, you can use an immersion blender to blend a portion of the soup before serving. The soup can be stored in the refrigerator for up to 5 days or frozen for up to 3 months.
