Description

This Hobo Casserole is a comforting and satisfying one-dish meal that’s perfect for busy weeknights. It’s packed with tender ground beef, potatoes, onions, and a rich, flavorful sauce, all baked to perfection with a golden-brown topping.


Ingredients

– 1 pound ground beef

– 3 medium potatoes, peeled and diced

– 1 onion, diced

– 1 (15 oz) can diced tomatoes

– 1 cup beef broth

– 2 tablespoons Worcestershire sauce

– 1 teaspoon dried thyme

– 1 teaspoon dried oregano

– 1/2 teaspoon garlic powder

– Salt and pepper to taste

– 1 cup shredded cheddar cheese


Instructions

1. Preheat your oven to 375°F (190°C).

2. In a large skillet, brown the ground beef over medium heat, breaking it up as it cooks. Drain any excess fat.

3. Add the diced potatoes, onions, diced tomatoes, beef broth, Worcestershire sauce, thyme, oregano, garlic powder, salt, and pepper. Stir to combine.

4. Transfer the mixture to a 9×13 inch baking dish and spread it out evenly.

5. Sprinkle the shredded cheddar cheese over the top.

6. Bake the Hobo Casserole for 30-35 minutes, or until the potatoes are tender and the cheese is melted and bubbly.

7. Remove from the oven and let it cool for 5 minutes before serving.

Notes

Variations include using different types of cheese, adding in frozen mixed vegetables, or using ground turkey or chicken instead of beef. Leftovers can be stored in the refrigerator for up to 4 days.
