Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, chilled and cubed

– 1 cup shredded cheddar cheese

– 2 tablespoons finely chopped fresh herbs (such as rosemary, thyme, or parsley)

– 1/4 cup cold water


Instructions

1. In a large bowl, whisk together the flour, baking powder, and salt.

2. Add the chilled butter cubes and use your fingers or a pastry cutter to work the butter into the dry ingredients until the mixture resembles coarse crumbs.

3. Stir in the shredded cheddar cheese and chopped fresh herbs.

4. Gradually add the cold water, mixing just until the dough comes together. Avoid overmixing.

5. Divide the dough in half, shape each half into a disk, and wrap in plastic wrap. Refrigerate for at least 30 minutes.

6. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

7. Working with one disk at a time, roll the dough out on a lightly floured surface to 1/8-inch thickness.

8. Use a sharp knife or cookie cutter to cut the dough into desired shapes, such as squares or rectangles.

9. Transfer the crackers to the prepared baking sheet, spacing them about 1 inch apart.

10. Bake for 12-15 minutes, or until the crackers are golden brown and crispy.

11. Remove from the oven and let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Store the cooled crackers in an airtight container at room temperature for up to 1 week. For a spicier version, add a pinch of cayenne pepper or paprika to the dough. Experiment with different herb combinations to suit your taste preferences.
