– 1 lb ground beef

– 1 onion, diced

– 1 (15 oz) can diced tomatoes

– 1 (15 oz) can kidney beans, drained and rinsed

– 1 cup beef broth


Instructions

1. – In a large pot or Dutch oven, brown the ground beef over medium-high heat, 5-7 minutes, making sure to crumble the beef as it cooks.

2. – Add the diced onion and minced garlic to the pot and cook for 2-3 minutes, until the onion is translucent.

3. – Stir in the chili powder, cumin, oregano, salt, and pepper. Cook for 1 minute to toast the spices.

4. – Pour in the diced tomatoes, kidney beans, and beef broth. Bring the mixture to a boil, then reduce the heat and let it simmer for 5-10 minutes, until thickened to your desired consistency.

Notes

For a spicier chili, add 1-2 tsp of cayenne pepper. You can also use ground turkey or chicken instead of beef. This chili freezes well, so feel free to make a double batch and save some for later.
