Ingredients

– 1 lb ground lamb

– 2 tsp paprika

– 1 tsp cumin

– 1 tsp caraway seeds

– 1 tsp garlic powder

– 1 tsp onion powder

– 1/2 tsp cayenne pepper

– 1/2 tsp salt

– 1/4 tsp black pepper

– 1 cup plain Greek yogurt

– 1/4 cup chopped fresh parsley

– 2 tbsp chopped fresh mint

– 1 tbsp lemon juice

– 1 garlic clove, minced

– 1/4 tsp salt


Instructions

1. – In a large bowl, combine the ground lamb, paprika, cumin, caraway seeds, garlic powder, onion powder, cayenne, salt, and black pepper. Mix well until the spices are evenly distributed.

2. – Divide the lamb mixture into 8 equal portions and shape each into a sausage patty, about 4 inches long and 1 inch thick.

3. – Heat a large skillet or grill pan over medium-high heat. Cook the merguez sausages for 3-4 minutes per side, until browned and cooked through.

4. – In a small bowl, stir together the yogurt, parsley, mint, lemon juice, garlic, and salt.

5. – Serve the homemade merguez sausages warm, drizzled with the herby yogurt sauce.

Notes

– For extra flavor, toast the caraway seeds briefly before adding to the lamb mixture.

– Adjust the cayenne pepper to taste, depending on your spice preference.

– The herby yogurt sauce can be made ahead of time and refrigerated until ready to serve.
