Description

This Homemade Potato Soup is a classic, comforting dish that’s easy to make and delivers a rich, velvety texture in every spoonful. It’s the perfect meal for chilly days and cozy gatherings.


Ingredients

– 2 lbs Russet potatoes, peeled and diced

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups chicken or vegetable broth

– 2 cups milk

– 2 tbsp butter

– 2 tbsp all-purpose flour

– 1 tsp dried thyme

– Salt and pepper to taste

– Chopped chives for garnish


Instructions

1. – In a large pot, melt the butter over medium heat. Add the diced onion and sauté for 5 minutes until translucent.

2. – Add the minced garlic and sauté for 1 minute until fragrant.

3. – Stir in the diced potatoes and broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the potatoes are tender.

4. – In a small bowl, whisk together the milk and flour until smooth. Slowly pour the milk mixture into the pot, stirring constantly, until the soup thickens.

5. – Stir in the dried thyme and season with salt and pepper to taste.

6. – Serve the Homemade Potato Soup hot, garnished with chopped chives.

Notes

For a creamier soup, use an immersion blender to partially purée the potatoes. You can also add cooked bacon, shredded cheese, or sour cream as toppings.
