Description

These Honey Butter Cornbread Poppers are the perfect bite-sized appetizer or snack. Tender, moist cornbread is infused with a sweet honey butter glaze for a flavor explosion in every irresistible bite.


Ingredients

– 1 cup cornmeal

– 1 cup all-purpose flour

– 1/4 cup white sugar

– 2 teaspoons baking powder

– 1/2 teaspoon salt

– 1/2 cup unsalted butter, melted

– 1/2 cup honey

– 2 large eggs

– 1/2 cup milk


Instructions

1. Preheat the oven to 400°F (200°C). Grease a 24-cup mini muffin tin with nonstick cooking spray.

2. In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt.

3. In a separate bowl, whisk together the melted butter, honey, eggs, and milk.

4. Pour the wet ingredients into the dry ingredients and stir just until combined (do not overmix).

5. Scoop the batter evenly into the prepared mini muffin cups, filling them about 3/4 full.

6. Bake for 12-15 minutes, or until a toothpick inserted in the center comes out clean.

7. Allow the poppers to cool in the pan for 5 minutes before transferring to a wire rack.

8. Serve warm, with additional honey for drizzling if desired.

Notes

For a savory twist, you can add shredded cheese, chopped jalapeños, or crumbled bacon to the batter. These poppers can also be made ahead and reheated before serving.
