Description

Indulge in the delightful flavors of autumn with this Honey-Glazed Acorn Squash dish. The tender, caramelized squash is topped with a creamy goat cheese and drizzled with a tangy-sweet cranberry sauce, creating a truly memorable seasonal meal.

Ingredients

– 2 medium acorn squash, halved and seeded

– 1/4 cup honey

– 1/2 cup crumbled goat cheese

– 1/4 cup cranberry sauce

Instructions

1. 1. Preheat the oven to 400°F (200°C).

2. 2. Place the acorn squash halves cut-side up on a baking sheet.

3. 3. Drizzle the honey over the squash, making sure to coat the tops and insides evenly.

4. 4. Bake for 25-30 minutes, or until the squash is tender and the edges are lightly caramelized.

5. 5. Remove the squash from the oven and top each half with a generous amount of crumbled goat cheese.

6. 6. Drizzle the cranberry sauce over the top of the squash.

7. 7. Serve warm and enjoy!

Notes

For a more decadent touch, you can add a sprinkle of toasted nuts or a crumble of crispy bacon on top of the goat cheese. This dish also pairs well with a light salad or roasted vegetables.
