Ingredients
– 1 1/2 cups all-purpose flour
– 1 teaspoon baking powder

– 1/4 cup honey
– 2 ripe peaches, peeled and diced
– 8 ounces cream cheese, softened
– 1/2 cup unsalted butter, softened
– 3 cups powdered sugar
Instructions
1. – Preheat oven to 350°F and line a 12-cup muffin tin with paper liners.
2. – In a medium bowl, whisk together the flour, baking powder, and salt.
3. – In a large bowl, beat the butter and granulated sugar until light and fluffy, about 2-3 minutes. Beat in the eggs one at a time, then stir in the vanilla and honey.
4. – Gradually fold the dry ingredients into the wet ingredients until just combined. Gently fold in the diced peaches.
5. – Scoop the batter into the prepared muffin cups, filling them about 3/4 full.
6. – Bake for 18-20 minutes, until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool completely.
7. – In a large bowl, beat the cream cheese and butter until smooth and creamy. Gradually add the powdered sugar and beat until light and fluffy.
