Ingredients
– 1 pound heirloom carrots, peeled and cut into 1-inch pieces
– 2 tablespoons olive oil
– 1/4 cup honey
– 2 tablespoons yuzu juice
– 1 teaspoon salt
– 1/4 teaspoon black pepper
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a large bowl, toss the heirloom carrot pieces with the olive oil, salt, and pepper until evenly coated.
3. Spread the carrots out on a baking sheet and roast for 20-25 minutes, or until they are tender and lightly browned.
