Description

These Hot Honey Pickled Carrots are a delightful sweet and spicy snack or side dish that’s ready in just 30 minutes. The perfect balance of honey, vinegar, and a hint of heat makes them irresistible.

Ingredients

– 1 pound carrots, peeled and sliced into 1/4-inch thick rounds

– 1 cup apple cider vinegar

– 1/2 cup honey

– 2 tablespoons red pepper flakes

– 1 teaspoon salt

– 1/2 teaspoon black pepper

Instructions

1. In a medium saucepan, combine the apple cider vinegar, honey, red pepper flakes, salt, and black pepper. Bring the mixture to a simmer over medium heat, stirring occasionally, until the honey has dissolved.

2. Add the sliced carrots to the vinegar mixture and stir to coat. Reduce the heat to low and let the carrots simmer for 10-15 minutes, or until they are tender but still have a bit of crunch.

3. Remove the pan from the heat and let the carrots cool in the pickling liquid for at least 15 minutes.

4. Transfer the pickled carrots and their liquid to a clean, airtight jar or container. Refrigerate for at least 4 hours or up to 2 weeks.

5. Enjoy the hot honey pickled carrots as a snack, side dish, or topping for salads, burgers, and more.

Notes

For a spicier version, add an extra tablespoon of red pepper flakes. You can also experiment with different spices, such as garlic powder, cumin, or oregano.
