Ingredients

– 1 lb pork loin, cut into 1-inch cubes

– 4 cups low-sodium chicken broth

– 2 tbsp low-sodium soy sauce

– 1 tbsp rice vinegar

– 1 tsp sesame oil

– 1 tsp grated ginger

– 2 cloves garlic, minced

– 8 oz shiitake mushrooms, sliced

– 2 cups chopped bok choy

– 4 oz ramen noodles (low-carb or zucchini noodles)

– 2 green onions, sliced

– 1 soft-boiled egg (optional)

– Sesame seeds for garnish


Instructions

1. – Place the pork, broth, soy sauce, rice vinegar, sesame oil, ginger, and garlic in the Instant Pot. Seal and cook on high pressure for 10 minutes.

2. – Quick release the pressure and remove the lid. Add the shiitake mushrooms and bok choy. Seal and cook on high pressure for 3 more minutes.

3. – Quick release the pressure again and remove the lid. Add the ramen noodles and stir until heated through, about 2 minutes.

4. – Ladle the ramen into bowls and top with sliced green onions, a soft-boiled egg (if using), and a sprinkle of sesame seeds.

Notes

– For a creamier broth, add 1/4 cup heavy cream or unsweetened coconut milk after pressure cooking.

– Customize the vegetables based on your preferences – try adding sliced radish, spinach, or bean sprouts.

– Store leftovers in an airtight container in the refrigerator for up to 3 days.
