Ingredients

– 1 lb ground beef

– 1 onion, diced

– 3 cloves garlic, minced

– 1 bell pepper, diced

– 1 can (15 oz) black beans, drained and rinsed

– 1 can (15 oz) kidney beans, drained and rinsed

– 1 can (15 oz) diced tomatoes

– 2 cups beef broth

– 1 packet taco seasoning

– 1 tsp chili powder

– Salt and pepper to taste


Instructions

1. – Set the Instant Pot to sauté mode and add the ground beef. Cook until browned, 5-7 minutes, making sure to crumble the beef as it cooks.

2. – Add the onion and garlic to the Instant Pot and sauté for 2-3 minutes until fragrant.

3. – Stir in the bell pepper, black beans, kidney beans, diced tomatoes, beef broth, taco seasoning, and chili powder. Season with salt and pepper to taste.

4. – Close the Instant Pot lid and set to pressure cook on high for 10 minutes.

5. – Once the cooking time is up, let the pressure release naturally for 5 minutes, then do a quick release.

6. – Serve the Instant Pot Taco Soup hot, garnished with your favorite toppings like shredded cheese, sour cream, and crispy tortilla strips.

Notes

– For a spicier soup, add an extra teaspoon of chili powder or a pinch of cayenne pepper.

– Substitute ground turkey or chicken for the beef if desired.
