Ingredients
– 2 packages ramen noodles (discard seasoning packets)
– 1 pound pork tenderloin, thinly sliced
– 4 eggs
– 2 cups baby spinach
– 4 green onions, sliced
– 1 cup shredded carrots
– 2 tablespoons soy sauce
– 1 tablespoon sesame oil
– 1 teaspoon garlic powder
– 1/2 teaspoon ground ginger
– Salt and pepper to taste
Instructions
1. Bring a large pot of water to a boil. Add the ramen noodles and cook according to package instructions, about 3 minutes. Drain and set aside.
2. In a large skillet, heat 1 tablespoon of oil over medium-high heat. Add the pork and cook until browned and cooked through, about 5-7 minutes. Transfer to a plate.
3. Carefully add the eggs to the boiling water and cook for 6-7 minutes for soft-boiled eggs. Drain and set aside.
4. In the same skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the spinach, green onions, and carrots. Sauté for 2-3 minutes until slightly wilted.
5. Add the cooked ramen noodles, pork, soy sauce, sesame oil, garlic powder, and ground ginger. Toss to combine and warm through.
6. Divide the ramen noodle mixture into bowls. Top each serving with a soft-boiled egg and additional green onions, if desired. Season with salt and pepper to taste.
Notes
For a vegetarian option, substitute the pork with tofu or mushrooms. You can also customize the toppings with other veggies, proteins, or condiments like sriracha or chili crisp.
