Description

Ingredients

– 4 slices thick-cut Irish cheddar cheese

– 2 teaspoons Dijon mustard

– 2 tablespoons unsalted butter, softened

– 4 slices sturdy white or sourdough bread


Instructions

1. Spread the butter evenly on one side of each bread slice.

2. On the unbuttered side of 2 bread slices, spread the Dijon mustard.

3. Layer the Irish cheddar cheese slices on top of the mustard.

4. Top with the remaining 2 bread slices, butter-side up.

5. Heat a skillet over medium heat. Cook the sandwiches for 2-3 minutes per side, or until the bread is golden-brown and the cheese is melted and gooey.

6. Remove from heat and serve immediately.

Notes

For a extra-crispy toastie, you can also butter the outside of the bread slices before cooking. Try experimenting with different Irish cheese varieties or adding a touch of chopped fresh herbs.
