Description

Indulge in the rich, buttery flavor of homemade Italian Nut Roll Cookies – a beloved family recipe that’s easy to make and perfect for any occasion. These traditional pastries feature a delicate dough wrapped around a sweet, nutty filling, creating a delightful treat that’s sure to impress.

Ingredients

– 2 cups all-purpose flour

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 1 cup unsalted butter, softened

– 3/4 cup granulated sugar

– 2 large eggs

– 1 teaspoon vanilla extract

– 2 cups chopped walnuts or pecans

– 1/2 cup granulated sugar

– 1 teaspoon ground cinnamon

Instructions

1. 1. In a medium bowl, whisk together the flour, baking powder, and salt.

2. 2. In a large bowl, beat the butter and 3/4 cup sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla.

3. 3. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.

4. 4. In a separate bowl, mix together the chopped nuts, 1/2 cup sugar, and cinnamon.

5. 5. Divide the dough into two equal pieces. On a lightly floured surface, roll out each piece into a rectangle, about 1/4 inch thick.

6. 6. Sprinkle half of the nut mixture evenly over one rectangle, leaving a 1-inch border. Carefully roll up the dough, starting from the short side, to form a log.

7. 7. Repeat with the remaining dough and nut mixture.

8. 8. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.

9. 9. Slice the logs into 1-inch thick cookies and arrange them on the prepared baking sheet, spacing them about 2 inches apart.

10. 10. Bake for 15-18 minutes, or until the cookies are golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For a more pronounced nutty flavor, toast the chopped nuts before mixing them with the sugar and cinnamon. The unbaked cookie logs can be frozen for up to 3 months, then thawed and sliced before baking.
