Ingredients
– 8 oz fresh sardines, cleaned and patted dry
– 1/2 cup panko breadcrumbs
– 1/4 cup grated Parmesan cheese
– 2 tbsp chopped fresh parsley
– 1 tsp lemon zest
– 1/4 tsp salt
– 1/8 tsp black pepper
– 2 tbsp olive oil
Instructions
1. 1. Preheat your oven to 400°F (200°C).
2. 2. In a shallow bowl, combine the panko breadcrumbs, Parmesan cheese, parsley, lemon zest, salt, and black pepper. Mix well.
3. 3. Dredge the sardines in the breadcrumb mixture, pressing gently to help the coating adhere.
4. 4. Heat the olive oil in a large oven-safe skillet over medium-high heat.
5. 5. Carefully add the coated sardines to the hot skillet and cook for 2-3 minutes per side, or until the breadcrumbs are golden brown.
6. 6. Transfer the skillet to the preheated oven and bake for an additional 5-7 minutes, or until the sardines are cooked through and flaky.
7. 7. Serve the Italian Crusted Sardines immediately, garnished with extra lemon wedges and parsley if desired.
Notes
For a crispy crust, be sure to pat the sardines dry before coating. You can also use regular breadcrumbs instead of panko, if preferred. Sardines are a great source of healthy omega-3 fatty acids, so this recipe is a nutritious and delicious option.
