Ingredients
– 3 cups fresh lemon juice (from approximately 10-12 lemons)
– 1 1/2 cups granulated sugar
– 1 tablespoon lemon zest
Instructions
1. In a medium saucepan, combine the lemon juice and sugar. Bring the mixture to a boil over medium-high heat, stirring constantly to dissolve the sugar.
2. Once the mixture reaches a boil, reduce the heat to medium-low and let it simmer, continuing to stir frequently, until the jam has thickened and reached your desired consistency, about 5-7 minutes.
3. Remove the saucepan from the heat and stir in the lemon zest.
4. Carefully pour the hot jam into clean, sterilized jars, leaving about 1/4 inch of headspace.
5. Seal the jars and allow the jam to cool completely before refrigerating. The jam will continue to thicken as it cools.
6. Store the Italian Lemon Jam in the refrigerator for up to 3 weeks.
Notes
For a thicker consistency, let the jam simmer for a few minutes longer. You can also add a pinch of salt to enhance the flavors. Lemon zest can be adjusted to taste preference.
