Description

Ingredients

– 1 pound Italian sausage, casings removed

– 1 onion, diced

– 3 cloves garlic, minced

– 4 cups cubed Russet potatoes

– 4 cups chopped kale

– 4 cups chicken broth

– 1 cup heavy cream

– 1 teaspoon dried oregano

– 1/2 teaspoon red pepper flakes

– Salt and pepper to taste

– Grated Parmesan cheese for serving


Instructions

1. Preheat oven to 375°F.

2. In a large skillet over medium-high heat, cook the sausage, breaking it up as it cooks, until browned, about 5-7 minutes.

3. Add the onion and garlic and cook for an additional 2-3 minutes until fragrant.

4. Stir in the cubed potatoes, kale, chicken broth, heavy cream, oregano, and red pepper flakes. Season with salt and pepper to taste.

5. Transfer the mixture to a 9×13-inch baking dish.

6. Bake for 25-30 minutes, or until the potatoes are tender and the casserole is bubbly.

7. Remove from the oven and let stand for 5 minutes before serving. Top with grated Parmesan cheese.

Notes
