Ingredients
– 1 cup white granulated sugar
– 1/2 cup light corn syrup
– 1/4 cup unsalted butter
– 1 teaspoon baking soda
– 1 1/2 cups roasted, salted peanuts
– 2 tablespoons finely chopped fresh jalapeño peppers (about 2-3 small peppers)
Instructions
1. Line a baking sheet with parchment paper and set aside.
2. In a medium saucepan, combine the sugar, corn syrup, and butter. Cook over medium heat, stirring constantly, until the mixture reaches 300°F on a candy thermometer, about 10-12 minutes.
3. Remove the pan from the heat and quickly stir in the baking soda. The mixture will foam up.
4. Immediately stir in the peanuts and chopped jalapeños until well combined.
5. Quickly pour the mixture onto the prepared baking sheet, spreading it out into a thin layer.
6. Allow the brittle to cool completely, about 20-30 minutes.
7. Once cooled, break the brittle into pieces and enjoy!
