Ingredients

– 2 cups all-purpose flour

– 1 cup almond flour

– 1 cup granulated sugar

– 1 teaspoon baking powder

– 1/2 teaspoon salt

– 3/4 cup unsalted butter, softened

– 2 large eggs

– 1 teaspoon vanilla extract

– 2 cups fresh blackberries

– 1/4 cup blackberry jam

– 1/2 cup sliced almonds


Instructions

1. Preheat the oven to 350°F (177°C). Grease a 9-inch round baking pan.

2. In a medium bowl, whisk together the all-purpose flour, almond flour, sugar, baking powder, and salt.

3. In a separate large bowl, beat the softened butter until creamy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

4. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.

5. Spread half of the batter into the prepared baking pan. Top with the fresh blackberries and dollops of blackberry jam.

6. Sprinkle the remaining batter over the top, then top with the sliced almonds.

7. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

8. Allow the cake to cool completely before slicing and serving.

Notes

For a richer flavor, you can use a combination of butter and oil in the batter. To make it gluten-free, substitute the all-purpose flour with a 1:1 gluten-free flour blend. Store the cooled cake at room temperature for up to 3 days or in the refrigerator for up to 1 week.
