Ingredients
– 8 ounces thinly sliced corned beef
– 1 cup sauerkraut, drained and squeezed dry
– 8 ounces Swiss cheese, shredded
– 8 ounces cream cheese, softened
– 1/4 cup grated Parmesan cheese
– 1 teaspoon garlic powder
– 1/2 teaspoon onion powder
– 1/4 teaspoon caraway seeds (optional)
– 1/4 cup almond flour
– 2 tablespoons melted butter
Instructions
1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a medium bowl, combine the softened cream cheese, Parmesan cheese, garlic powder, onion powder, and caraway seeds (if using). Mix until well incorporated.
3. Lay the corned beef slices flat on a clean surface. Spread a layer of the cream cheese mixture onto each slice, leaving a small border around the edges.
4. Top the cream cheese with a spoonful of sauerkraut, then sprinkle the shredded Swiss cheese over the sauerkraut.
5. Carefully roll up each corned beef slice, starting from the short side and tightly enclosing the filling. Secure the rolls with toothpicks.
6. In a shallow dish, mix the almond flour and melted butter. Roll the Reuben roll-ups in the almond flour mixture, coating them evenly on all sides.
7. Arrange the coated roll-ups on the prepared baking sheet, seam-side down.
8. Bake for 15-20 minutes, or until the roll-ups are golden brown and crispy.
