Ingredients
– 1 cup grated mozzarella cheese
– 1/2 cup grated parmesan cheese
– 1/4 cup almond flour
– 1 egg
– 1/2 teaspoon garlic powder
– 1/4 teaspoon onion powder
– 1/4 teaspoon Italian seasoning
– 1/8 teaspoon salt
– 24 slices of pepperoni
Instructions
1. Preheat your oven to 400°F (200°C).
2. In a medium-sized bowl, mix together the mozzarella cheese, parmesan cheese, almond flour, egg, garlic powder, onion powder, Italian seasoning, and salt until well combined.
3. Roll the cheese mixture into 24 small balls, about 1-inch in diameter.
4. Place a slice of pepperoni on the bottom of each ball, pressing it down gently to adhere.
5. Arrange the pepperoni-topped balls on a parchment-lined baking sheet.
6. Bake for 15-18 minutes, or until the bites are golden brown and the cheese is melted and bubbly.
