Description
Savor the bold, tropical flavors of Key West with this easy-to-make grilled chicken recipe, marinated in a tantalizing citrus-based marinade and finished to perfection over an open flame.
Ingredients
– 1 pound boneless, skinless chicken breasts
– 1/2 cup fresh orange juice
– 1/4 cup fresh lime juice
– 2 tablespoons olive oil
– 2 tablespoons brown sugar
– 1 teaspoon ground cumin
– 1 teaspoon garlic powder
– 1/2 teaspoon smoked paprika
– 1/4 cup chopped fresh cilantro, plus more for garnish
– Salt and black pepper to taste
Instructions
1. In a large resealable bag or shallow dish, combine the orange juice, lime juice, olive oil, brown sugar, cumin, garlic powder, and smoked paprika. Add the chicken breasts and turn to coat evenly. Refrigerate for at least 30 minutes, or up to 4 hours.
2. Preheat grill to medium-high heat. Remove the chicken from the marinade, reserving the marinade.
3. Grill the chicken for 5-7 minutes per side, or until cooked through and no longer pink in the center. Baste the chicken with the reserved marinade during the last few minutes of grilling.
4. Transfer the grilled chicken to a cutting board and let rest for 5 minutes. Slice or shred the chicken and garnish with fresh chopped cilantro.
5. Serve the Key West Grilled Chicken with your favorite sides, such as a tropical fruit salad, rice, or grilled vegetables.
Notes
For extra flavor, you can marinate the chicken for up to 4 hours. The longer the chicken marinates, the more pronounced the tropical citrus flavors will be. Leftovers can be stored in the refrigerator for up to 3 days and enjoyed in salads, wraps, or as a protein-packed snack.
